The best falafel I have ever had was at a mall – believe it or not – at a place called MAOZ Vegetarian in Boca Town Center Mall in Boca Raton, Florida. Their crisp exterior paired with the soft and savory interior, drizzled with flavorful sauces on a bed of roasted veggies, sold me instantly. With some trial and error and inspiration from online sources, these Falafel burgers were born.

  2. In a large mixing bowl, add the drained chickpeas. Using a potato masher, mash, leaving some larger chickpea chunks for texture.
  3. Add the scallions, parsley, paprika, cumin, flour, and vegetable oil. Mix to combine and season to taste with salt and pepper.
  4. Form into 4 burger patties and transfer onto the prepared baking pan.
  5. Place in the oven to bake until golden-brown and crispy on both sides, approximately 20-25 minutes, flipping once halfway through the cooking time.
  6. Serve in a warm pita with hummus and toppings of choice. Enjoy!
