Time: 25 minutes Difficulty: Super Easy
INGREDIENTS
- 1 cup of creamy peanut butter
- 2 ½ cups of rolled or old-fashioned oats
- 1/2 cup of liquid sweetener (honey, maple syrup, or agave)
- 1 teaspoon vanilla extract
- 1/4 cup of dark chocolate chips (optional)

Pro Tip: These snacks are just as delicious if you use almond or sunflower butter!
Step 1: Mix the Ingredients
Add oats to a medium mixing bowl. Stir in peanut butter, liquid sweetener, vanilla extract, and chocolate chips and seeds if desired. Mix until a sticky dough forms. Refrigerate the mixture for about 15 minutes.
Step 2: Scoop into Bite-Sized Snacks
Line a large plate with parchment paper. Remove the chilled mixture from the fridge and use a spoon to scoop it into round bites. Use your hands to shape the balls and make them even. Place each ball on the plate. Serve immediately or store for up to 2 weeks in a refrigerated air-tight container!

YUM! I’ll have to try these. I have not tried one, on the market yet, that compares taste wise to the ones you can make yourself. My sister makes the best bites-similar to this recipe -she’s also has mastered a brownie like bite with dates and cacao. *recipe coming soon* 🙂
Brownie bites with dates and cacao sounds amazing! 😋
