And you may be wondering – “What tomato should I use for bruschetta?” The answer is any tomato you want. A Spanish tomato is certainly prettier than a Roma, Campari, or other store-bought on-the-vine tomato, but any tomato will do.
Fresh Tomato Bruschetta Bites
Transport yourself to the crystal–clear Italian coastline with this easy tomato bruschetta snack. All you need are a few ingredients and about twenty minutes and you have yourself a healthy vegetarian snack that’s perfect for any time of day!

INGREDIENTS
Step 1: Slice and Toast the Bread
Preheat the oven to 450° F (230° C) Slice the bread diagonally into slices about half an inch thick. Use a pastry brush to brush one side with olive oil and lay that side down on a baking sheet. When the oven is done preheating, place the baking sheet with the bread onto the top rack to toast it until lightly browned. This should take about 6 minutes.
Step 2: Make the Tomato Mixture
Clean and core the tomatoes. Finely chop them and put them in a medium bowl. Stir in the chopped basil, balsamic vinegar, olive oil, and minced garlic and mozzarella if desired. Season with salt and pepper.
Pro tip: Removing the seeds from the tomatoes helps prevent runny bruschetta!
Step 3: Assemble the Slices
Spoon the tomato mixture on top of the toasted pieces of bread. Enjoy immediately!
