The star of this show is the Palmini hearts of palm pasta noodles. So, what are hearts of palms? This delicious and healthy pasta alternative is made from the core of certain palm trees and is a great option for those who are looking to cut back on carbs and increase their vegetable intake. It can take many forms. It is most commonly cut into little medallions (usually added to salads), halved for baking, or transformed into the shape of various noodles.
I paired the canned hearts of palm pasta (Palmini brand) with a store-bought rotisserie chicken to create a hearty and nutritious meal. The Palmini brand is 100% hearts of palm, with no fillers, and nothing extra, which we love! The resulting meal was both satisfying and good for my health. In this article, I will share with you my recipe for this healthy and delicious hearts of palm pasta with rotisserie chicken.
How does Hearts of Palm taste?
Hearts of palm taste reminiscent of artichokes or capers, tangy and flavorful. They are already tender from the can and will get softer (more noodle-like) when boiled for 5-10 minutes. Our favorite thing about hearts of palm pasta is its ability to take on any flavor and contribute its own.

It is a low-carb, low-calorie alternative to traditional pasta. And yes! There are tons of health benefits that far outweigh a regular pasta noodle. Hearts of palm noodles are a great source of fiber and contains important nutrients like potassium, calcium, zinc and vitamin C. By pairing this with rotisserie chicken; you get a meal that is not only delicious but a meal that’s lean and packed with protein. So if you’re wondering, is hearts of palm good for you? Notes About This Recipe:
Sauce – You do not have to make your own alfredo sauce from scratch. I do because I don’t like store-bought alfredo; it tends to be on the saltier/high-sodium side. If you do like store-bought, Rao’s is a safe bet. I eyeballed the sauce ingredients, so the measurements aren’t exact. Start with the minimum; you can always add later to fit your preference.
Preparation – I ladled the sauce onto the noodles once they were done, but that’s optional. You can definitely put the noodles straight into any sauce; they will soften and cook the same.
Protein – Chicken is not required; this would be great with a host of other proteins, including another vegetable side, shrimp, scallops, or cod.
Heart of Palm Alfredo Pasta
INGREDIENTS:
1 Can of Hearts of Palm Linguine
2 Tbsp Butter
2 cloves garlic (finely chop)
1/2 cup heavy cream
1/2 of a shallot
Parmesan (freshly grated)
Store-bought rotisserie chicken
DRY INGREDIENTS:
Sea salt
Pepper
Italian Seasoning
- Drain the Palmini “noodles” and rinse them with water.
- Add the Palmini to boiling water in a medium saucepan and cook for 5 – 8 minutes for a softer texture.
- If you’re making your sauce from scratch, skip to #4. If you’re using store-bought sauce – drain the boiled water and use the same saucepan. Just pour the sauce on the noodles, mix them together, and let it heat up for about 2-3 minutes.
- Add in your butter, finely chopped garlic, and shallots over medium heat in a small saucepan and cook for about a minute until it becomes fragrant.
- Then, add in your heavy cream and grated parmesan and cook for another 2-3 minutes or until the ingredients are incorporated.
- Once the sauce is ready, you can either add your noodles to the pan or you can ladle your sauce over your plated noodles. Either way, it’s done and ready to serve.
